Does steam make radar impossible?

Not automatically. The radar technology, frequency, antenna or probe, condensation and vessel geometry must be reviewed together.

Why does density matter for DP level?

Differential-pressure level is derived from hydrostatic head, so a density change can change the indicated level if it is not compensated.
